Christmas Ploughman’s platter with maple, Guinness and apple glazed ham on the bone, cranberry sauce, swiss cheese, green oak lettuce, chutney, pickles, grapes, served with French bread.

Country Charcuterie platter of cured meats, cheeses, dips, olives, crudité and pickles vegetables, served with toasts, crackers & ficelle

CANAPES

  • Vietnamese rice paper roll, nam jim dip

  • Baby bruschetta; boconccini, basil, roma tomato, extra virgin olive oil

  • Oysters au natural, finger lime pearls

  • Parmesan and chilli polenta soldiers, lemony aioli

  • Salt & Pepper calamari, chilli lemon soy dip

  • Thai fish cakes, ginger sesame glaze

Baby baked camembert with nutty cranberry crumble- rosemary and sea salt oaten cookies

 

Followed by…

  • Hot baked 5 spice loaf, salty browned butter

  • Upside-down quince tart; rosewater, bay & pink peppercorn poached quince, spiced onion jam, mint, feta & maple walnut crumb, marscapone

  • Pink; baby beets, whitloof, sorrel, fennel, blood orange, hibiscus, purple basil, candied clementine, rosella & orange dressing

  • Kingfish; beetroot and pernod infusion, baked with dried fennel, pistachio and rye crumb, salted lemon sprinkle, white pepper

  • Gratin; celeriac, jerusalem artichoke, potato, parsnip, & fennel thins, sage & lemon cream, gruyere, savoury gingerbread & walnut crumbs

  • Savill Club Beef; 90 day aged eye fillet, stilton puds, port reduction, crispy fried  capers, cabernet salt

  • Dutch cream spuds roasted in duck fat, rosemary

  • Pancetta roasted brussel sprouts, winter leaves, chestnuts

DESSERT

  • Juniper, cherry, sea salt and dark chocolate panna cotta, rose fairy floss, side of mini mulled wine

LATE NIGHT SUPPER

  • Hot caramelised Sweet bangalow ham, maple & Guinness glaze, cloves, French bread, pineapple & chilli jam, mustards

Abundant grazing table of grilled prosciutto, salmon gravlax splashed in pernod, baked ricotta, Persian marinated fetta, warmed spiced olives, marinated baby vegetables, served with homemade lavosh and crackers, ficelle & toasts.

 

FEASTING served progressively

  • Bread rolls served with butter

  • Prawn cocktail salad- baby cos, avocado, thousand island sauce, caper-berry, salmon pearls

  • Wild rocket, witlof, fennel, pear & candied maple walnut salad, violas, white balsamic dressing

  • Sweet Bangalow Pork stuffed with pancetta, macadamia, preserved lemon, bacon & thyme, sage buerre noisette, crackle crumble

  • Panzanella salad of heirloom tomatoes, garlicky croutons, olives, Spanish onion, bocconcini, parsley & basil, capsicum, red wine vinaigrette

  • Rib eye rubbed in rosemary and pepper, cooked medium rare, bearnaise sauce, spiced onion jam

  • Summer greens - tossed with extra virgin olive oil, lemon

  • New season baby Dutch creams tossed with thyme, pink pepper, zest, a little butter
